Our second attempt at a Mexican lager and we're going for a slightly different approach and recipe. Although we're including the crucial ingredient in a Mexican lager - some kind of corn derivative like maize, we're going for a slightly darker beer than the usual pilsner malt base like we did in our first mexican lager (which turned out great).

This recipe was taken from the 20West Mexican lager by pixelHop Beer Co, who shared it on the Spike Brewing recipe blog. It has won a couple of awards for pixelHop - as good a reference for a recipe as you can get so we figured we'd give it a go ourselves. We had to adjust it slightly for our own system but the key percentages and numbers remain the same. We're also using some slightly different hops and yeast.
Foreword
We're looking forward to seeing how it turns out from having a little more character and complexity in the malt bill from the inclusion of Vienna and Munich malts in addition to some regular 2 row and Pilsner malts.
